Directions

1.  Place the ground beef in the pressure cooker over medium high heat; cook until brown and crumbly, 8 to 10 minutes. Remove the ground beef, and drain off the excess fat.

2.  Return the open pressure cooker to the burner over medium heat, pour in the olive oil, and stir in the onion, green pepper, and jalapeno pepper. Cook and stir for 3 to 4 minutes, until the onion is translucent. Add the garlic, and cook and stir for about 30 more seconds. Return the meat to the pressure cooker; mix in the kidney beans, diced tomatoes, tomato paste, brown sugar, cocoa powder, red pepper flakes, chili powder, cumin, salt, and water.

3.  Lock the lid, bring the cooker up to pressure, reduce heat to maintain pressure, and cook for 8 minutes. Remove cooker from the heat, and let the pressure reduce on its own, 5 to 10 minutes.

4. When the pressure is fully released, remove the lid, stir the chili, and serve

1.  In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in molasses. Combine the flour, baking soda, cinnamon, ginger, cloves, salt and nutmeg; gradually add to creamed mixture. Refrigerate for 1 hour or until dough is easy to handle.

2. Roll into 1-in. balls; roll in sugar. Place 2 in. apart on ungreased baking sheets. Bake at 350 degrees F for 8-12 minutes or until puffy and lightly browned. Cool for 1 minute before removing to wire racks.

Return syrup to the boil, add lemon juice, mix well and strain over figs to completely cover. Seal while hot.
You may use Balsamic vinegar if you don’t have lemons.

•1 Tablespoon Italian parsley, finely chopped

•4 anchovies, finely chopped

•1 Tablespoon raisins

•1 Tablespoon pine nuts

•2 ounces olives, pitted, drained, and finely ground

•6 Tablespoons bread crumbs

•Salt and pepper

Preparation:Preheat oven to 350 degrees F (175 C).

Wash the bell peppers, cut them in half, and remove the seeds.

In a skillet, pour 4 tablespoons of the extra-virgin olive oil and turn heat to medium.

Saute the onion and garlic, until onion is soft and translucent. Remove the skillet from the heat. Stir in the parsley, anchovies, raisins, pine nuts, ground olives, bread crumbs, salt, and pepper. Drizzle with remaining 2 tablespoons of extra-virgin olive oil. Mix all the ingredients thoroughly.

Fill the bell peppers with the mixture. Place the filled bell peppers side by side in an oiled oven pan. Bake for about 40 minutes, or until the surface is golden.

Remove pan from the oven and let the stuffed peppers cool at room temperature. Serve lukewarm.

  • 1 (17.25 ounce) package frozen puff pastry, thawed
  • 1 cup white sugar
  • 1/2 cup custard powder
  • 3/4 cup cornstarch
  • 5 1/4 cups milk
  • 1/4 cup butter
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 cup confectioners’ sugar
  • 1 tablespoon milk
  • 1 dash vanilla extract

Directions

1.  Preheat the oven to 400 degrees F (200 degrees C). Unfold puff pastry sheets, and place flat onto baking sheets. Bake for 10 to 15 minutes, or until lightly browned and puffed. Set aside.

2.  Combine the sugar, custard powder and cornstarch in a large saucepan. Mix in just enough milk to form a paste, then gradually mix in the rest. This will prevent lumps from forming. Add the butter. Cook over medium heat, stirring frequently until thick. You may need to use a whisk to ensure a smooth consistency. When the mixture comes to a simmer, cook stirring constantly for 2 minutes. Remove from the heat, and stir in the egg yolks and vanilla.

3.  Line a 9 inch baking dish with aluminum foil. Place one of the baked pastry sheets in the bottom of the dish. Spread the custard filling in an even layer over the pastry, and top with the other sheet.

4. Mix the confectioners’ sugar with 1 tablespoon of milk, and a dash of vanilla to make an icing. Spread over the top of the pastry. Refrigerate until the custard layer is firm. Remove from the pan and slice.
